This recipe is a Philadelphia style ice cream; that means no eggs or cooking. All you need to do is steep, chill and freeze. A lot of the time we add buttermilk to this style of ice cream, but here it won't be necessary. You'll end up with a light and refreshing ice cream with a little bit of fine ice crystal. You can have this with a nice hot chai, maybe over some apple pie or warm bread pudding. Personally, I like it with some butter cookies or shortbread.
2 cups heavy cream
1 cup milk
2 Tablespoons Metro Chai Naked Chai
1 cup honey
¼ cup sugar
1 pinch of salt
In a saucepan place the cream, milk. Honey, sugar, salt.
Put the metro chai into a tea ball or a bag and place into the milk and cream mixture.
Bring just to a boil and let the tea steep for about 30 minutes.
Remove from the heat and let cool to room temperature.
Chill in the refrigerator overnight.
Remove the tea bag.
Freeze in your ice cream freezer following the directions provided by the manufacturer.
